Just not into it

So for the last couple weeks or so I have just been not into cooking, blogging or anything else for that matter.  KLT sorta threw me for a loop when he got mad and posted his job on Monster late one night.  Little did I know about how long these things actually take, he is off for most of this week and Friday is his official last day here at Purdue.  That’s right he will no longer be just down the hall when I need him.  He won’t be here to have lunch with every day, there will be no car pooling to work, no being mad that he’s running late (which is better now that he just stays at my place) and I am sure the list goes on.  This threw us into OMG we have to get these houses sold so we can just live in one.  WOW! Let me just say that I am really tired.  I might add I am really tired of his parents too.

Well last weekend I decided that if we ate some breakfast before tearing away at the master bedroom we wouldn’t need lunch and that would be good.  So I decided to throw together biscuits and gravy.  Great idea except I have been on a low carb diet for 19 months and there are no magic cans of Grands Biscuitsin the fridge.  OH NOES!  Oh come on I tell myself surely I can find a biscuit recipe that is good and just make them from scratch.  Well I look in the pantry and find some Jiffy Mix, but to be honest I have never been a fan.  So I pull out the beloved Better Homes & Gardens and mix myself a batch. Recipe.

Here they are waiting on the oven.  I did swap some of the flour for whole wheat, trying to sneak that healthy stuff in there.

They were a tick dry and didn’t rise very much.  Not sure if it was “old” ingredients or the addition of 1/2 c. whole wheat flour.  But once they were smothered in gravy you didn’t notice.
