God showed me now didn&#8217;t he.\u00a0 Guess someone needs to protect me from myself.\u00a0 So I decided to get some things together for dinner and then the sun came out.\u00a0So here is what we had pork chops, grilled egg plant and squashed potatoes.\u00a0 \ud83d\ude42<\/p>\n<p>For the pork chops I finely chopped (by hand!) 3 cloves of garlic, 3-4 stems of rosemary and 6 stems of thyme add a dash of salt and pepper and we are ready to roll.\u00a0 I drizzled some olive oil and applied this pasty substance to all sides of the pork chop.\u00a0 \ud83d\ude42\u00a0 These were chops I picked up Saturday at the Farmer&#8217;s Market.\u00a0 Let those babies rest!<\/p>\n<p>Eggplant, got to love that strange purple beast!\u00a0 I sliced him up, sprinkled with salt on both sides and placed in a strainer to get some of the liquid out.\u00a0 I mixed 3 Tlb of olive oil, 2 Tbl of balsamic vinegar, a pinch of basil, oregano, thyme, and dill add some salt and freshly ground pepper mix and let set.\u00a0 Once I was ready to coat the eggplant I placed them on paper towel to collect the excess liquid.\u00a0 Apply the mixture with a brush and place on a plate to wait.\u00a0 I actually went back and applied the brown goodness a couple of times before they made it to the grill.\u00a0 Once grilled a sprinkle of parm cheese offered a pretty addition.<\/p>\n<p>OH! Smashed Potatoes how I love thee and all their crisp goodness.\u00a0 First wash and &#8220;dry&#8221; the red and gold potatoes.\u00a0 Then smack them really good with something, no really you need to crack them or it&#8217;s just not good.\u00a0 To be honest breaking them into smaller pieces makes them taste soooo much better.\u00a0 Now slice 3-4 heads of garlic (I recommend LOTS! it&#8217;s like a chip you can&#8217;t just eat one).\u00a0 Place the smashed potatoes into a tall sided skillet, add oil (enough to cover the bottom) and sprinkle the garlic around.\u00a0 At this time you can add some sliced up onion but I always over cook it.\u00a0 Salt and pepper you are ready to go.\u00a0 Cook over med-high heat for 10 min (till you see some golden color) then reduce heat, cover and cook till done.\u00a0 You are suppose to add some sprigs of Thyme but I forgot today.\u00a0 \ud83d\ude09\u00a0 Here they are ready for the grill:<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" border=\"0\" width=\"500\" src=\"http:\/\/farm4.static.flickr.com\/3127\/2733706618_9d9ec5fac3.jpg\" alt=\"Ready to cook smashed potatoes\" height=\"335\" \/><\/p>\n<p>here they are in their cooked goodness:<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" border=\"0\" width=\"500\" src=\"http:\/\/farm4.static.flickr.com\/3209\/2732873845_dbe4bd99f8.jpg\" alt=\"Finished smashed potatoes\" height=\"335\" \/><\/p>\n<p>Oh yeah it was good<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" border=\"0\" width=\"500\" src=\"http:\/\/farm4.static.flickr.com\/3101\/2732873991_95475e9de6.jpg\" alt=\"Plated Meal\" height=\"335\" \/><\/p>\n","protected":false},"excerpt":{"rendered":"<p>So today I called in sick hoping to get some extra sun time, HA!
