{"id":154,"date":"2008-08-12T13:07:16","date_gmt":"2008-08-12T19:07:16","guid":{"rendered":"https:\/\/clarkcreations.net\/blog\/?p=154"},"modified":"2012-01-28T13:19:24","modified_gmt":"2012-01-28T19:19:24","slug":"all-about-pesto","status":"publish","type":"post","link":"https:\/\/clarkcreations.net\/blog\/all-about-pesto\/","title":{"rendered":"all about Pesto"},"content":{"rendered":"<p>Last year I started a radical diet.\u00a0 I cut out carbs, not completely but mostly.\u00a0 Before you start to complain or give advice I have to tell you this was at the suggestion of my doctor.\u00a0 How does this tie into pesto?\u00a0 Well I went out for lunch one day to La Scala the Italian restaurant and ordered a sandwich.\u00a0 It came with pesto mayo, so I kindly asked if they could replace that with just pesto.\u00a0 Ah HA! The point is that pesto became my favorite condiment and pizza topping of all time.\u00a0 \ud83d\ude42\u00a0 So last summer I planted 6 basil plants so that I could experiment with pesto recipes.\u00a0 \ud83d\ude09\u00a0 This year due to the untimely death of a plant or two and the adoption of Suzie I have 4 plants.\u00a0 So lets make pesto.<\/p>\n<p>Some Fresh Cut Basil<br \/>\n<a href=\"http:\/\/www.flickr.com\/photos\/photos_by_tammy\/2756587965\/\" title=\"_IGP8868 by tclarkcreations, on Flickr\"><img loading=\"lazy\" decoding=\"async\" width=\"500\" src=\"http:\/\/farm4.static.flickr.com\/3155\/2756587965_da66ffdda4.jpg\" alt=\"_IGP8868\" height=\"335\" \/><\/a><\/p>\n<p>Our washed and ready basil. I can&#8217;t stress how important it is to wash and spin dry your basil, that is unless you like a little extra protein.<br \/>\n<a href=\"http:\/\/www.flickr.com\/photos\/photos_by_tammy\/2757421658\/\" title=\"_IGP8947 by tclarkcreations, on Flickr\"><img loading=\"lazy\" decoding=\"async\" width=\"500\" src=\"http:\/\/farm4.static.flickr.com\/3292\/2757421658_5e6b687d52.jpg\" alt=\"_IGP8947\" height=\"335\" \/><\/a><\/p>\n<p>My favorite part of\u00a0prepping garlic is the SMACK!<br \/>\n<a href=\"http:\/\/www.flickr.com\/photos\/photos_by_tammy\/2756587713\/\" title=\"_IGP8948a by tclarkcreations, on Flickr\"><img loading=\"lazy\" decoding=\"async\" width=\"500\" src=\"http:\/\/farm4.static.flickr.com\/3024\/2756587713_5143c872f5.jpg\" alt=\"_IGP8948a\" height=\"462\" \/><\/a><\/p>\n<p>Our ingredients:<\/p>\n<p>1\/3 cup pine\u00a0 nuts<br \/>\n1\/2 cup Parmesan cheese<br \/>\n2-3 cloves of garlic<br \/>\n1\/4 teaspoon of salt and freshly ground pepper<br \/>\nolive oil<\/p>\n<p><a href=\"http:\/\/www.flickr.com\/photos\/photos_by_tammy\/2756587797\/\" title=\"_IGP8951a by tclarkcreations, on Flickr\"><img loading=\"lazy\" decoding=\"async\" width=\"489\" src=\"http:\/\/farm4.static.flickr.com\/3010\/2756587797_f6b2302446.jpg\" alt=\"_IGP8951a\" height=\"500\" \/><\/a><\/p>\n<p>Here we are, all the ingredients but the oil in the food processor (or blender) ready to pulse.<br \/>\n<a href=\"http:\/\/www.flickr.com\/photos\/photos_by_tammy\/2757421346\/\" title=\"_IGP8952a by tclarkcreations, on Flickr\"><img loading=\"lazy\" decoding=\"async\" width=\"348\" src=\"http:\/\/farm4.static.flickr.com\/3169\/2757421346_3d02f88749.jpg\" alt=\"_IGP8952a\" height=\"500\" \/><\/a><\/p>\n<p>Run the processor until you get a nicely fine chopped consistency. Scrape down the sides of the bowl and pulse once more. Now you are ready to add the oil. Let the processor run and carefully poor a steady stream of oil into the bowl.\u00a0 This is where the &#8220;guess&#8221; of how much oil happens.\u00a0 You want to make it a nice consistency for most things and maybe a little more oily for pasta, and maybe thicker for pizza topping.\u00a0<\/p>\n<p>Here are a few of the finished product.
