{"id":340,"date":"2010-07-29T21:28:34","date_gmt":"2010-07-30T01:28:34","guid":{"rendered":"https:\/\/clarkcreations.net\/blog\/?p=340"},"modified":"2012-01-28T13:09:54","modified_gmt":"2012-01-28T19:09:54","slug":"vegetable-titan","status":"publish","type":"post","link":"https:\/\/clarkcreations.net\/blog\/vegetable-titan\/","title":{"rendered":"Vegetable Titan"},"content":{"rendered":"<p>It is no seekrit that I watch or listen to rather quite a bit of <a title=\"Food TV\" href=\"http:\/\/www.foodnetwork.com\/\" target=\"_blank\">FoodTV<\/a>.\u00a0 A lot of times they make things that are too complex, don\u2019t sound that good or are otherwise just not any fun.\u00a0 However one day I was watching <a href=\"http:\/\/barefootcontessa.com\/about.shtml\" target=\"_blank\">Ina<\/a> from <a href=\"http:\/\/barefootcontessa.com\/television.shtml\" target=\"_blank\">The Barefoot Contessa<\/a>\u00a0and she made a vegetable dish that looked like something even KLT would enjoy.\u00a0 Now granted I was working hard and reducing my carb intake so this was a delightful addition to the pretty regular piles of veggies I was eating.<\/p>\n<h2>Ingredients<\/h2>\n<p>1 medium yellow onion, cut in half and sliced<br \/>\n2 garlic cloves, minced<br \/>\n4-5 medium round potatoes, unpeeled<br \/>\n1 good sized zucchini<br \/>\n2-3 \u00a0medium Roma tomatoes<br \/>\n1 teaspoon kosher salt<br \/>\n1\/2 teaspoon freshly ground black pepper<br \/>\n1 tablespoon fresh thyme leaves, plus extra sprigs (substitute a couple healthy pinches of dried, rub in palms first to warm and release oils &amp; aroma)<br \/>\n2 ounces <a href=\"http:\/\/en.wikipedia.org\/wiki\/Gruyere_cheese\" target=\"_blank\">Gruyere cheese<\/a>, grated \u00a0(Here we use <a href=\"http:\/\/en.wikipedia.org\/wiki\/Monterey_Jack_cheese\" target=\"_blank\">Monterey Jack<\/a> as Gruyere wasn\u2019t available)<\/p>\n<h2>Instructions<\/h2>\n<p>So I have adjusted this to make enough for 2-3 people.\u00a0 The original recipe can be found on Ina\u2019s website.<\/p>\n<p>When shopping for your vegetables you really want to look for veggies of the same size in girth.\u00a0 When slicing your vegetables I find it useful to cut the potatoes thinner as they take longer to cook than zucchini and tomatoes.\u00a0 Preheat oven to 375 degrees.\u00a0 Slice vegetables and grate the cheese.<\/p>\n<p><a title=\"titanCollage by tclarkcreations, on Flickr\" href=\"http:\/\/www.flickr.com\/photos\/photos_by_tammy\/4301224511\/\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/farm5.static.flickr.com\/4020\/4301224511_efdceb52d3.jpg\" alt=\"titanCollage\" width=\"500\" height=\"168\" \/><\/a><\/p>\n<p>In a medium saut\u00e9 pan, heat 2 tablespoons of olive oil and cook the onions over medium-low heat for 8 to 10 minutes, until translucent. Add the garlic and cook for another minute.\u00a0 Place the onion and garlic in the bottom of a prepared glass baking dish.\u00a0 I opted for the glass pie plate as it looks pretty and holds just enough for the two of us.\u00a0 Layer on top your vegetables alternating and be sure to fit them in snuggly and completing only one layer.\u00a0 Sprinkle with salt, pepper and thyme leaves.\u00a0 Drizzle with a swirl of olive oil.<\/p>\n<p><a title=\"_IGP4911 by tclarkcreations, on Flickr\" href=\"http:\/\/www.flickr.com\/photos\/photos_by_tammy\/4286879968\/\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/farm5.static.flickr.com\/4059\/4286879968_70322ed38b.jpg\" alt=\"_IGP4911\" width=\"500\" height=\"334\" \/><\/a><\/p>\n<p>Cover the dish with foil and bake until the potatoes are tender, approximately 45 minutes.\u00a0 Remove cover and sprinkle with cheese (or load it on as we like to do) and bake for 30 minutes or until golden.\u00a0 ENJOY!!<\/p>\n<p><a title=\"_IGP4912 by tclarkcreations, on Flickr\" href=\"http:\/\/www.flickr.com\/photos\/photos_by_tammy\/4286138849\/\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/farm5.static.flickr.com\/4038\/4286138849_a977250982.jpg\" alt=\"_IGP4912\" width=\"500\" height=\"334\" \/><\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>It is no seekrit that I watch or listen to rather quite a bit of FoodTV.
