{"id":368,"date":"2011-01-04T09:03:02","date_gmt":"2011-01-04T15:03:02","guid":{"rendered":"https:\/\/clarkcreations.net\/blog\/?p=368"},"modified":"2010-12-23T15:56:25","modified_gmt":"2010-12-23T21:56:25","slug":"awesome-sauce","status":"publish","type":"post","link":"https:\/\/clarkcreations.net\/blog\/awesome-sauce\/","title":{"rendered":"Awesome Sauce"},"content":{"rendered":"<p>Also known as Red Sauce, Pizza Sauce, and dip for your bread sticks!<\/p>\n<p>Having a garden is GREAT.\u00a0 Having your harvest come in a little at a time SUCKS!\u00a0 Yeah, Yeah I know I\u00a0was posting all summer that I am hauling in 12-16 lbs every few days, but dang it that is mostly cucumbers and squash!\u00a0 So what&#8217;s a girl to do with tomatoes in quantities not worthy of skinning, dicing and canning or freezing?\u00a0 ROAST THEM!!\u00a0 Now I can&#8217;t tell you exactly how many of everything you need, not all tomatoes are created equal, but I can give you some estimates.\u00a0I used this technique multipe times during the summer to create a nice stash of red sauce to use over the winter.\u00a0 This reminds me I need to get on the ball and start using this great stuff.\u00a0<\/p>\n<p>Just like the sun dried tomatoes I recommend the aluminum foil to avoid heavy clean up.\u00a0 And BTW if this foil fails and the liquid gets underneath it might just be worth it to buy a new pan but that my friends is a story for a different day.\u00a0<\/p>\n<p><a title=\"_IGP7034 by tclarkcreations, on Flickr\" href=\"http:\/\/www.flickr.com\/photos\/photos_by_tammy\/4841836143\/\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/farm5.static.flickr.com\/4153\/4841836143_ae35e9359b.jpg\" alt=\"_IGP7034\" width=\"500\" height=\"334\" \/><\/a><\/p>\n<h2>What you will need<\/h2>\n<p>1-2 Onion, peeled and quartered or so depending on the size &#8211; I prefer sweet<br \/>\n1-2 bell peppers, what ever color in big rough pieces<br \/>\n3 or so\u00a0heads of garlic with the tops cut off<br \/>\nTomatoes &#8211; I used roma, grape and yellow pear what ever\u00a0I had at the time<br \/>\nsalt and pepper<br \/>\nolive oil<br \/>\nfresh herbs (oregano and rosemary)<\/p>\n<p>Start by placing the garlic upright in random spots even placed through out the baking pan you are using, I have a couple of these <a style=\"&amp;quot;border: none;\" href=\"&lt;a href=&quot;http:\/\/www.amazon.com\/gp\/product\/B0000CFMLC?ie=UTF8&amp;tag=clarkcreat-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=B0000CFMLC&quot;&gt;Wilton Jelly Roll and Cookie Pan, 12 x 18 x 1 Inches Deep&lt;\/a&gt;&lt;img src=\">Wilton Jelly Roll and Cookie Pans, 10 1\/2 x 15 1\/2 x 1 Inches Deep<\/a><img loading=\"lazy\" decoding=\"async\" style=\"border: none !important; margin: 0px !important;\" src=\"http:\/\/www.assoc-amazon.com\/e\/ir?t=clarkcreat-20&amp;l=as2&amp;o=1&amp;a=B0000CFN56\" border=\"0\" alt=\"\" width=\"1\" height=\"1\" \/>that I use for bacon and things like this.\u00a0 Now start cutting your tomatoes, for the smaller ones just cutting them in half is enough for the Roma depending on size you can cut them in 3-4 slices.\u00a0 Spread the tomatoes all over the pan.\u00a0 Now toss around the onions and peppers.\u00a0 Drizzle olive oil over the garlic heads pretty heavily, remember we are roasting garlic here.\u00a0 Run a light drizzle of olive oil over the pan of goodness, sprinkle with salt and pepper.\u00a0 Now place your herbs, keep the rosemary in tact and just put clumps of oregano through out.\u00a0 You want to be able to remove the dried up herbs when this is over.\u00a0 Place this soon to be awesome in the oven at 350 degrees for the next several hours.\u00a0 This is yet another thing I can&#8217;t tell you exactly because some tomatoes are JUICY and others are not the more liquid you need to burn off the longer this will take.\u00a0 I take frequent visits to the oven to let the steam out and get a good face full of the smell\u00a0 \ud83d\ude09\u00a0 .\u00a0<\/p>\n<p><a title=\"Untitled by tclarkcreations, on Flickr\" href=\"http:\/\/www.flickr.com\/photos\/photos_by_tammy\/5010150121\/\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/farm5.static.flickr.com\/4133\/5010150121_a4fb4a1944.jpg\" alt=\"\" width=\"500\" height=\"254\" \/><\/a><\/p>\n<p>Once your goodies are starting to be dried out (you pick more dry less sauce and it&#8217;s thicker\/dryer good for pizza more wet probably better for pasta).\u00a0 Remove from the oven and let cool a bit.\u00a0 Remove and discard the herbs.\u00a0 Squeeze the garlic from the paper and place into the food processor, add the remaining items from your baking dish.\u00a0 Now pulse that baby!\u00a0 You now need to taste and check for seasoning.\u00a0 A couple of times I have added fresh herbs and all times I have added a little bit of salt.\u00a0 This stuff is amazing!!!<br \/>\n<a title=\"_IGP7038a by tclarkcreations, on Flickr\" href=\"http:\/\/www.flickr.com\/photos\/photos_by_tammy\/4842456176\/\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/farm5.static.flickr.com\/4150\/4842456176_3ecf6f15b0.jpg\" alt=\"_IGP7038a\" width=\"500\" height=\"397\" \/><\/a><\/p>\n<p>What to do with it now?\u00a0 PIZZA?
