I was given this great book 101 Things to do with a cake mix, while I have only tried a few things one of my absolute favorites is the snickerdoodle recipe. Now I know it’s the Holidays and folks are needing thousands of cookies but since it is just the two of us this is a great recipe as it is QUICK and only produces about 2 dozen cookies. Yesterday I set out to make Mexican Wedding Cakes, I new darn well that they in fact were not Mexican or wedding cakes so why on earth did we call them that? My research on this didn’t bring me any really good answers or even a <blockquote> to enhance the smartness of this page. All I found is that they were call Russian Tea Cakes until about the 1950s when the Mexican Wedding Cake term started being used. The guess is that it was because of our strained relationship with Russia at the time. Hmmm, can anyone say “Freedom Fries”.

Homemade Marshmallows!

Homemade what? Yes marshmallows. I am not sure what prompted me to try this a few years ago but I am really glad for what ever it was. Now you may think that marshmallows are a daunting task but to be honest it is incredibly easy and doesn’t take long. The worst part of the process is waiting over night for them to set up and dry. This is an excellent gift item for co-workers; Christmas mug from the local department store (99 cents), either home made cocoa mix or a nice individual package (99 cents – $2) and your marshmallows.

Fried Okra

Well this situation started out as really annoying. We planted 5 okra plants because Sam likes it. Then 2 of them died. That leaves us with 3 plants. They are producing but so far not that much. Mind you the plants are as tall as I am. Every time we go to the garden and have a few okra (which is almost every other day) Kerry suggest “WE” fry them and see if they are good. “WE” is such a great term, it means me preparing them and cleaning up the mess. Vegetable Titan

It is no seekrit that I watch or listen to rather quite a bit of FoodTV. A lot of times they make things that are too complex, don’t sound that good or are otherwise just not any fun. However one day I was watching Ina from The Barefoot Contessa and she made a vegetable dish that looked like something even KLT would enjoy. Now granted I was working hard and reducing my carb intake so this was a delightful addition to the pretty regular piles of veggies I was eating.

Grown up Hot Chocolate

So for the 3rd or 4th time I have made us some rather adult hot chocolate. I have to warn you this is not for the occasional chocolate lover, it’s rich, it’s thick and it contains booze. I believe that after KLT enjoyed a cup the other night he proclaimed that he needed a glass of milk to follow that.

INGREDIENTS So I have tweaked this to get it to make 2 full coffee cups.

Fill 2 coffee mugs with hot water to preheat the cups. Get out your chocolate sprinkles, whipped cream or marshmallows.

Tropical Dream Cupcakes

So I had this idea for a cupcake, I had been tinkering with the idea of strawberry cupcakes with Malibu butter cream frosting. I decided that the last time I had a strawberry cupcake it was too strong and fake tasting. Today was the day I decided to come home and give this recipe a try. I have to say I LOVE THEM!!!

Lemon Ginger Sorbetto

Last summer I made Lemon Ginger Sorbetto probably for the same reason I am making it now. I needed a lemon and had to buy an entire bag. 😀 Last year I worked so hard scraping the freezing concoction every 30 minutes while this year I cheated and used the ice cream maker. Gotta love technology. This is a very refreshing and pallet cleansing dish. Even my mom liked it!

Blackberry Lemon Shake-Ups

I was watching a local station while visiting Nashville last week and over the lunch hour saw some recipes for summer time beverages. Well it’s been hot down there for a while but it was perfect timing for this Indiana girl.
