About 9 years ago a “temporary” worker came to work as part of a team I was on. She made this wonderful treat for the Holiday and it was then that I took that recipe and made it my own. What could possibly be bad about combining two of my favorite things; Chocolate and Popcorn. This by far is one of the easiest things you can make and people will adore you.

I recommend using a pop corn maker if you are making a large batch otherwise you can just use bags of microwave pop corn.
Since it is the holiday and everyone at work is counting on me brining them in Almond Bark Pop Corn I made a lot and by a lot, I filled 2 grocery sacks about 3/4 full with poppped corn. It is really important that you salt the pop corn if you make it yourself. The salt/sweet combination is one of the draws IMO.
For simple storage and easy clean up put the popped corn in a paper grocery bag. Now for the hard part. You can adjust this measurement based on how chocolatey you like it. I start with a glass measuring cup with 2 squares of almond bark.
Microwave for 1 minute and try to stir (the glass will get hot and things will start to melt faster as you proceed). Return to the microwave for 1 minute and stir. I prefer a heat resistant rubber spatula, this will help you get the melted chocolate out of the container. For 2 squares of almond bark I start with just under 4 cups of popcorn. Place the popcorn in a large bowl and pour the melted almond bark over the top, stir to cover.
Once coated you need to lay the pop corn out to dry. For this quantity I taped wax paper to the bar and layed out my corn to dry there. Otherwise linning baking sheets with wax paper works well. Repeat until you have the quantity you desired.
Now that the corn is not sticky you can package any way you like it, hord it for yourself or give it to your friends. They will love you for it and really it was easy and all the dishes come clean in the dishwasher. Almost effortless clean up.
