So today I called in sick hoping to get some extra sun time, HA! God showed me now didn’t he. Guess someone needs to protect me from myself. So I decided to get some things together for dinner and then the sun came out. So here is what we had pork chops, grilled egg plant and squashed potatoes. 🙂
For the pork chops I finely chopped (by hand!) 3 cloves of garlic, 3-4 stems of rosemary and 6 stems of thyme add a dash of salt and pepper and we are ready to roll. I drizzled some olive oil and applied this pasty substance to all sides of the pork chop. 🙂 These were chops I picked up Saturday at the Farmer’s Market. Let those babies rest!
Eggplant, got to love that strange purple beast! I sliced him up, sprinkled with salt on both sides and placed in a strainer to get some of the liquid out. I mixed 3 Tlb of olive oil, 2 Tbl of balsamic vinegar, a pinch of basil, oregano, thyme, and dill add some salt and freshly ground pepper mix and let set. Once I was ready to coat the eggplant I placed them on paper towel to collect the excess liquid. Apply the mixture with a brush and place on a plate to wait. I actually went back and applied the brown goodness a couple of times before they made it to the grill. Once grilled a sprinkle of parm cheese offered a pretty addition.
OH! Smashed Potatoes how I love thee and all their crisp goodness. First wash and “dry” the red and gold potatoes. Then smack them really good with something, no really you need to crack them or it’s just not good. To be honest breaking them into smaller pieces makes them taste soooo much better. Now slice 3-4 heads of garlic (I recommend LOTS! it’s like a chip you can’t just eat one). Place the smashed potatoes into a tall sided skillet, add oil (enough to cover the bottom) and sprinkle the garlic around. At this time you can add some sliced up onion but I always over cook it. Salt and pepper you are ready to go. Cook over med-high heat for 10 min (till you see some golden color) then reduce heat, cover and cook till done. You are suppose to add some sprigs of Thyme but I forgot today. 😉 Here they are ready for the grill:

Oh yeah it was good
