Just throw stuff in a pan pasta dish

So the other night I was at a loss for something to make for dinner. I can’t make anything that would create left overs cause I am leaving for KBNA soon. So I decide I am gonna make some pasta and basically just throw some stuff in a pan. Now I do have an idea that I want to use pesto and the wonderful chicken asiago cheese and spinach sausage. I also am thinking about all the wonderful things I enjoy putting on my home made pizza.

We start with the penne pasta, of course Barilla Pluswe want to be healthy. While that is underway I get a skillet . . . → Read More: Just throw stuff in a pan pasta dish

Restaurant Review – La Hacienda Nashville

Friday night between KLT getting off work and having to be back home to babysit some billing task we decided to run up to the closest mexica restaurant La Hacienda. They had a very large and complex menu which in my opinion is quite common for a Mexican joint. We were there just after 5 pm so we figured we could get in and out quickly and have good service. Well one of those two things did prove to be true. First I have to say that while the chairs chosen for this establishment were probably really cool looking they do not have the structure to be long term. My . . . → Read More: Restaurant Review – La Hacienda Nashville

Ahhhh Garlic

I am annoyed at every grocery retailer in town. REALLY ANNOYED! I love garlic and I love to cook with garlic. Now of course there are many garlic options in the grocery store you can buy whole cloves of garlic peeled and in a jar, it’s a great convenience but they tend to go bad prematurely and are a bit expensive. There are even glass containers of already pressed/minced garlic and they come mostly packed in oil. This is a nice substitute to have around and has a pretty good shelf life. Then there is the “FRESH” garlic and the root of all my anger. Every store in town that . . . → Read More: Ahhhh Garlic

Meatloaf

One day I just woke up and had a desire to eat meatloaf and mashed potatoes. YUM! Comfort food. Had they not closed the McDonald’s Dinner I would of just went through their drive through and gotten it to go. So instead it’s a stop at the grocery store – boo! And them some wonderful time in my kitchen – YEAH!

How I did meatloaf, this time. Well I bought several chunks of meat a package of ground chuck, a package of ground turkey, a package of ground bison (cause it was on sale I got 2) and a chunk of pork as we can’t get ground pork here. So . . . → Read More: Meatloaf

Italian Stew Chili

Or as we like to call it Italian Chili. Seems to me that the word stew induces a very specific vision. For me the word stew makes me think heavy, a thickened sauce, large chunks of meat, potatoes and vegetables. And when I first made this recipe it ran more along the lines of tasting like chili without the red base. I have adapted this recipe from one in the Kraft Family Food and Fun magazine , Easy Italian Stew from the Fall 2007 edition. The reason I made changes was mostly due to not being able to find ingredients and knowing that I could do some of them a . . . → Read More: Italian Stew Chili

Resturant Review – Nashville Aquarium

So we had friends come through town and they wanted to meet up for dinner. A wonderful surprise and it felt weird as we don’t really live in Nashville just yet. They have a toddler and wanted to eat some place that would be entertaining for her. They gave us the options to pick from Macaroni Grill, Nashville Aquarium and Dave & Busters. We stayed with our first choice the Aquarium. OMG it is located in the Opry Mills Mall. For those who know me well you know that I HATE the mall and I really hate crowds of people. As we were looking for a parking spot I could . . . → Read More: Resturant Review – Nashville Aquarium

Guinness French Onion Soup

I love French Onion Soup and have tried many different variations and even tried it at many different restaurants. Over time I have resolved that there are certain things that I prefer. Like toasted bread instead of fresh, I also like to cut it into cubes and place it in the bottom instead of floating a slice on top. My cheese of choice is Monterrey Jack. I do have some ideas that I would like to try once I have a fancy cheese outlet.

Ingredients:

Guinness Beer – most of one bottle Onions, sliced or julian which ever makes you happy cloves of garlic – 4 cloves chopped, pressed which . . . → Read More: Guinness French Onion Soup

Christmas Day FOOD and lots of it

Yes my post are all kinds of “out of order” and I apologize now. I also will make it a New Year’s Resolution to get my butt back in gear and start cooking and writing again for my loyal readers.

Christmas this year was without a doubt different and probably not one of our favorites. I do however predict that in several years when we are standing in our OMG HUGE house with every family member and every friend we can stuff in there to enjoy Christmas us looking at each other and saying “remember in 2008 when we spent Christmas alone in that crummy apartment”. We have each . . . → Read More: Christmas Day FOOD and lots of it

A Holiday Tradition

About 9 years ago a “temporary” worker came to work as part of a team I was on. She made this wonderful treat for the Holiday and it was then that I took that recipe and made it my own. What could possibly be bad about combining two of my favorite things; Chocolate and Popcorn. This by far is one of the easiest things you can make and people will adore you.

Ingredients: You can pick this up Almond Bark in the baking isle for around $2.00.

I recommend using a pop corn maker if you are making a large batch otherwise you can just use bags of . . . → Read More: A Holiday Tradition

…ah and were are we

Well I have to admit that the departure of KLT for Nashville had far more of an impact on me than I ever expected. I basically lost all zest for most things and really didn’t feel much like doing anything. The good news is that I get to spend 15 days with him most of them in Nashville while he is working. That will leave me with LOTS of time to catch up on blog postings, ARS post, photo uploading and all around organization. So I am here in Nashville, it’s 60 degrees and raining on this Christmas eve and my beloved apparetnly doesn’t want me to play rock band . . . → Read More: …ah and were are we
